Part dinner party, part restaurante de puertas cerradas, TEMPERATURE is the second in a series of
underground dinners with Chef Miles Ake, Keith Pasko, and Hosts Sarah Beadle and J.R. Valenzuela.
Five courses exploring the depth and range of temperature.
Amuse
Hamachi, colatura, serrano, pluot, lima bean.
First
'Bloody mary' compressed watermelon, spicy tomato water, four garnishes (pickled celery, horseradish espuma, pink peppercorns, lemon-olive brine.)
Second
Warm yellow corn soup, fresh wasabi custard, seared monkfish liver.
Third
Crisp pork skin, chilled lobster, pickled vegetables, watercress, hot coriander foam.
Fourth
133 degree short ribs, 148 degree egg, fennel, celery root puree, bagna cauda.
Fifth
'Hot' chocolate mousse, star anise sabayon, bay leaf ice cream, graham cracker strusel, clove salt.
